Unstuffed Zucchini Bake

Stuffed zucchini in an easy casserole.

Ingredients

  • 6-8 each small Zucchini or Squash
  • 10 – 15 each small Sweet Mini Peppers
  • 1 ½ lbs. Ground Beef
  • 1 each egg
  • 1 cup Cornflake Crumbs
  • 2 ½ cup Shredded Cheese eg. Mexican Blend, Mozzarella, Jack
  • 1 15 oz can Petite Diced Tomatoes
  • 1 ½ cups Tomato Sauce
  • 2 tsp Italian Seasoning
  • 1 tsp Onion Powder

Instructions

  • Slice Zucchini into strips.
  • Line 9x13 pan with Zucchini strips
  • Slice Sweet Mini Peppers in half.
  • Top Zucchini strips with Mini Peppers.
  • In a mixing bowl place Ground Beef, egg, Cornflake Crumbs, ½ cup Shredded Cheese, Diced Tomatoes, Tomato Sauce, Italian Seasoning, and Onion Powder.
  • Combine until thoroughly mixed.
  • Place meat mixture on top of Zucchini and Sweet Mini Peppers.
  • Spread evenly across top.
  • Bake at 350 F for 45 minutes.
  • Remove from oven and top with remaining 2 cups Shredded Cheese.
  • Bake at 350 F for another 5 – 10 minutes until cheese is melted and browned.

Notes

Use a pan with holes in the bottom and place on a broiler pan. The zucchini sweats when baking and a lot of liquid is retained in the bottom if it has nowhere to go. That can make the bake soggy.


Steps

Slice Zucchini into strips. Line 9×13 pan with Zucchini strips.

Slice Sweet Mini Peppers in half. Top Zucchini strips with Mini Peppers.

Gather stuffing ingredients.

In a mixing bowl place Ground Beef, egg, Cornflake Crumbs, ½ cup Shredded Cheese, Diced Tomatoes, Tomato Sauce, Italian Seasoning, and Onion Powder.

Combine until thoroughly mixed.

Place meat mixture on top of Zucchini and Sweet Mini Peppers. Spread evenly across top.

Bake at 350 F for 45 minutes.

Remove from oven and top with remaining 2 cups Shredded Cheese.

Bake at 350 F for another 5 – 10 minutes until cheese is melted and browned.
