Pumpkin Pie Spiced Rum Balls

A favorite fall pie flavor rolled into bite sized balls and spiked with spiced rum!

Pumpkin Pie Spiced Rum Balls

Pumpkin pie flavor rolled into bite sized balls and infused with spiced rum.

Ingredients

  • 1 3 cups Vanilla Wafers ground (1 box)
  • 1 cup Ground / Crushed Pecans
  • 1 cup + 2/3 cup Powdered Sugar
  • 1 Tbsp. + 1/8 tsp. Pumpkin Pie Spice
  • ¼ cup + 1 Tbsp. Light Brown Sugar
  • 1/8 Cup Pumpkin
  • 3 Tbsp. Light Corn Syrup
  • ½ cup Spiced Rum

Instructions

  • Grind nuts and wafers.
  • Pour into large mixing bowl and add 1 cup powdered sugar.
  • Add 1/4 cup brown sugar.
  • Mix thoroughly.
  • Combine together corn syrup, pumpkin, and 1 tablespoon pumpkin pie spice.
  • Pour over dry mixture.
  • Work in wet ingredients with a fork or pastry cutter tool (like you would with butter) until crumbly.
  • Add spiced rum.
  • Work together until combined and can be rolled into small balls.
  • Combine powdered sugar, 1 tablespoon brown sugar, and 1/8 teaspoon pumpkin pie spice.
  • Using a tablespoon or small scoop, take dough and roll into 1 inch balls.
  • Roll dough in powdered sugar mixture and lay on wax paper in a lightly open container.

Notes

Let dough balls air over night for alcohol to set and evaporate. After, store in air tight container.

Pour ground wafers and nuts into large mixing bowl.

Add 1 cup powdered sugar and 1/4 cup brown sugar.

Mix thoroughly.

Pour corn syrup, pumpkin, and 1 tablespoon pumpkin pie spice into a bowl.
