Easy, three ingredient pumpkin pancakes. Made with pancake mix, pumpkin ice cream and water. Perfect for holiday breakfast or brunch!
Pumpkin Ice Cream Pancakes
Ingredients
- 3 cups Pancake Mix
- 1 ½ cups Pumpkin Ice Cream melted
- 1 cup Water
Instructions
- Pour melted Pumpkin Ice Cream into blender.
- Pour pancake mix into blender.
- Blend until smooth.
- Add Water and blend until combined.
- Heat griddle or skillet.
- Using a scoop, or measuring cup, pour pancake batter onto griddle.
- Cook until bubbles form on top. (Note: 1-2 minutes)
- Turn pancakes and cook on second side for about 1 minute.
- Using a spatula, remove from griddle and put on a plate.
- Serve warm with whipped cream or butter and syrup.

Scoop ice cream into a bowl or measuring cup and let thaw overnight in the fridge.
