Elote in a cup! A copycat Disney recipe for their Champion Corn Cup. So easy! So yummy.

Elote Corn Cup
Ingredients
- 2 15 oz. cans Corn
- ½ cup Mexican Crema
- ½ - 1 tsp. Tajin
- ½ cup Cotija
- 4-6 Snack Cups disposable w/ lids
Instructions
- Place corn into a medium cooking pan.
- Heat until hot.
- Place Mexican Crema into a small mixing bowl.
- Add Tajin to Crema.
- Stir until completely combined.
- Place snack cups onto a tray.
- Using a slotted spoon, place about ½ cup of corn into each snack cup.
- Top with 1 -2 tablespoons Mexican Crema mixture.
- Top with 1 – 2 teaspoons Cotija.
- Sprinkle Tajin on top for extra flavor and color.
- Serve warm.

Steps

Heat until steaming.
Place Mexican Crema into a small mixing bowl.
Add Tajin to Crema.
Stir until completely combined.
Place snack cups onto a tray or plate. Using a slotted spoon, place about ½ cup of corn into each snack cup.
Top with 1 -2 tablespoons Mexican Crema mixture.
Top with 1 – 2 teaspoons Cotija.
Sprinkle Tajin on top for extra flavor and color.
Serve warm or cover with lids for serving later.
Best served warm! Squeeze lime juice over the top for added flavor.
