Easter Basket Cupcakes w/ Edible Baskets

Easter basket cupcakes with baskets made from won-ton wrappers.

Ingredients

  • 2 packages Green Cake MIx or 1 box white cake mix
  • 4 each Eggs
  • 1 1/3 cups 7-Up or Sprite
  • ½ cup Oil
  • 2 cans Green Frosting flavored or unflavored
  • 1 packages Won-ton Wrappers
  • 1 bag Egg Shaped Candies e.g. jelly beans, M&Ms Eggs
  • 1 package Airheads Extremes Rainbow Berry Sour Candy Strips
  • Green, Pink, or White Sugar Crystals

Instructions

  • Preheat oven to 350 degrees F.
  • Pour cake mix into mixing bowl.
  • Add 7-Up.
  • Add Oil.
  • Add Eggs.
  • Mix until blended.
  • Grease 12-cup muffin tin.
  • Place one Won-ton Wrapper into each muffin cup.
  • Pour 1 scoop mixed Cake Batter into each cup.
  • Bake for 20-22 minutes.
  • Remove from oven and let cool for 30 minutes.
  • Fill frosting applicator with frosting.
  • Pipe frosting onto cupcakes
  • Sprinkle cupcakes with green (or other color) sugar.
  • Place 2-3 candy eggs on each cupcake.
  • Cut candy strips in half length-wise.
  • Adhere strips to cupcakes by pressing each end into the frosting.

Notes

  • Use white frosting and add green food coloring.
  • Use white cake mix and add green food coloring.
  • Lightly brush egg wash on tips of won-tons and sprinkle with colored sugar before baking for added glitz.
  • After baking, spray won-tons with Wilton colored mist to give them extra color.
  • Keep chilled so the frosting and handles stay firm. They will soften when exposed to warm temperatures and begin to droop.

Mix until blended.

Grease 12-cup muffin tin. Place one Won-ton Wrapper into each muffin cup.

Pour 1 scoop mixed Cake Batter into each cup.

So the muffin cups are filled like this.

Bake for 20-22 minutes. Remove from oven and let cook for 30 minutes.

Fill frosting applicator with frosting.

Pipe frosting onto cupcakes.

The cupcakes will look something like this.

Sprinkle cupcakes with green (or other color) sugar.

Place 2-3 candy eggs on each cupcake.
