Chicken and Cheese Stuffed Mini Peppers Recipe

Low carb and easy to make! Eat as an appetizer or as an entree. Sweet mini peppers stuffed with shredded chicken and shredded cheese.

Chicken & Cheese Stuffed Mini Sweet Peppers

Easy, low carb appetizer or entree. Sweet mini peppers stuffed with shredded chicken and shredded cheese.

Ingredients

  • 24 each Mini Sweet Peppers
  • 2 ½ cups Chicken Shredded
  • 2 ½ cups Cheese Shredded (spicy or non-spicy)

Instructions

  • Pre-heat oven to 350 degrees F.
  • Remove tops from peppers and take out seeds.
  • Line baking dish with foil.
  • Place shredded cheese into a bowl.
  • Add shredded chicken to cheese and mix with the chicken.
  • Using your fingers, stuff each pepper with the cheese and chicken mixture.
  • Lay peppers on their sides in the baking dish.
  • Bake peppers for 35 minutes in the oven.
  • Serve warm.

Notes

Use any cheese you desire. Top with sour cream and/or salsa for extra flavor.

Pre-heat oven to 350 degrees F. Rinse and dry peppers.

Using your fingers, stuff each pepper with the cheese and chicken mixture.

Lay peppers on their sides in the foil lined baking dish.
