Easy “coffee cake” for a weekend morning or on the go. Made with cake mix and blueberries.
Blueberry Muffin Cake
Ingredients
- 1 Box White or Yellow Cake Mix
- 1/3 cup Vegetable Oil
- 1 cup Water
- 3 each Eggs
- ½ cup Butter
- 2 ¼ cups Light Brown Sugar
- 1 Tbs Cinnamon
- 4 cups Blueberries fresh
Instructions
- Prepare cake according to instructions on the back of the box.
- Stir in 1 Tbs. Cinnamon.
- Pour ½ of the batter into a 9x9, greased baking dish.
- Melt butter.
- Add Brown Sugar.
- Stir until blended and smooth.
- Dribble ½ of the brown sugar and butter mixture over the batter in the pan.
- Swirl through with a knife.
- Top with ½ of the Blueberries.
- Pour remaining cake batter over the blueberries.
- Top with remaining Brown Sugar and Butter mixture.
- Top with remaining Blueberries.
- Sprinkle ¼ cup Brown Sugar over Blueberries.
- Bake at 350 F for 40 – 60 minutes, or until a knife comes out clean.
- Let cool or serve warm.
Notes
Test an area of the cake for done-ness that does not have a crack (swirl of brown sugar and butter). The cake will be done before it settles. The cake will continue to bake once you remove it from the oven.
Steps
Add cake mix, oil, water, and eggs to a mixing bowl.
Blend until smooth and add 1 Tbs. Cinnamon. Stir.

Add Brown Sugar.
