Banana Chocolate Chunk Muffins Recipe

Cake mix, bananas and chocolate chunks combine to make moist, decadent muffins.

Banana Chocolate Chunk Muffins

Ingredients

  • 1 box White Cake Mix
  • 2 ½ cups Dark Chocolate Chip Chunks
  • 3 each Bananas over ripe
  • 3 each eggs
  • 1/3 cup Oil
  • 1 ¼ cup Water
  • 1 cup Flour
  • 1 cup Brown Sugar
  • 2-3 Tbs Butter chilled

Instructions

  • Heat oven to 350°F.
  • In a small bowl, smash bananas with a fork until smooth.
  • Place cake mix into mixing bowl.
  • Add water, eggs, and oil.
  • Blend until thoroughly mixed but not over beaten.
  • Add banana.
  • Add chocolate chunks.
  • Grease, or use muffin liners, a muffin tin.
  • Pour muffin batter into muffin tin, filling cups ½ way.
  • Mix together flour, brown sugar, and chilled butter until blended and coarse.
  • Top each muffin cup with 1-2 teaspoons of streusel.
  • Top with chocolate chunks.
  • Bake for 20-30 minutes until light brown on top.
  • Remove from oven and let cool 10-15 minutes. Remove from tins and keep chilled in fridge or serve warm.

Notes

Keep chocolate chunks chilled so they can be sprinkled easily. They melt quickly at room temperature and can be difficult to get out of the bag.

Grease, or use muffin liners, a muffin tin. Pour muffin batter into muffin tin, filling cups ½ way. (Mine got a bit too full.)

Mix together flour, brown sugar, and chilled butter until blended and coarse.
