Cake mix, bananas and chocolate chunks combine to make moist, decadent muffins.
Banana Chocolate Chunk Muffins
Ingredients
- 1 box White Cake Mix
- 2 ½ cups Dark Chocolate Chip Chunks
- 3 each Bananas over ripe
- 3 each eggs
- 1/3 cup Oil
- 1 ¼ cup Water
- 1 cup Flour
- 1 cup Brown Sugar
- 2-3 Tbs Butter chilled
Instructions
- Heat oven to 350°F.
- In a small bowl, smash bananas with a fork until smooth.
- Place cake mix into mixing bowl.
- Add water, eggs, and oil.
- Blend until thoroughly mixed but not over beaten.
- Add banana.
- Add chocolate chunks.
- Grease, or use muffin liners, a muffin tin.
- Pour muffin batter into muffin tin, filling cups ½ way.
- Mix together flour, brown sugar, and chilled butter until blended and coarse.
- Top each muffin cup with 1-2 teaspoons of streusel.
- Top with chocolate chunks.
- Bake for 20-30 minutes until light brown on top.
- Remove from oven and let cool 10-15 minutes. Remove from tins and keep chilled in fridge or serve warm.
