Sometimes I want vegetables, and lots of them! The easiest way is going to our local salad bar restaurant where I pile on all the vegetables and skip the lettuce. I figure why pile on the lettuce when the vegetables taste better and are what cost more in the store.
I know, lettuce has fiber and is low carb. Meh….lettuce, of course that is only my opinion. When I “feel” like eating lettuce I usually pile on the spinach instead. At least I am getting vitamin something that way.
The other way to get vegetables (as I am really not a huge fan of them cooked) is my Just Toppings Salad.
My husband loves it, I love it, and some of the leftover is good fiber for our fur babies….yes, they get in on the healthy action, too.
When I first thought of this, it was because I wanted a salad…crunch, crunch, munch, munch….not quite like a cow and its cud, but the idea is I wanted plants.
So, I figured why not buy the veggies I would normally put on my plate at the salad bar and make my own salad.
This was the outcome. I change up the veggies by putting in broccoli, cauliflower, corn, etc. It all depends on my cravings at the time.
Put any ol’ dressing on you want. Sometimes I go healthy with just vinegar, other times I load on the fat with Blue Cheese. Your choice.
So here’s to crunchin’ and munchin’ on veggies!
Place both bags of Broccoli Slaw into large bowl.
Chop Bell Peppers and add to bowl.
Chop Celery and add to bowl.
Chop Cucumbers and add to bowl.
So the bowl filled with crunch will look like this.
Plate and add dressing.
Crunch and munch!
Just Toppings Salad

- 2 bags Broccoli Slaw
- 1 Red Bell Pepper
- 1 Green Bell Pepper
- 3 stalks Celery
- 1 – 2 English Cucumbers
- Any other vegetables you like
- Place both bags of Broccoli Slaw into large bowl.
- Chop Red Bell Pepper and add to bowl.
- Chop Green Bell Pepper and add to bowl.
- Chop Celery and add to bowl.
- Chop Cucumbers and add to bowl.
- Add dressing.
- You can store this salad in a covered container in the fridge for about four days.
